Looking for a simple, easy way to make delicious cupcakes every time? Don’t feel like baking from scratch? Well, here is your answer! My friend Saucy over at Saucy Sprinkles has a no fail recipe using store-bought cake mixes that will always keep you coming back for more.
Here is what she says:
“Pick your mix. Don’t pay any attention to the package directions. Saucy is serious about this. It’s her way or the highway. You will need: one package of cake mix (use the good kind… Betty Crocker or Duncan Hines), three large eggs, one half cup of butter or margarine, and one cup of water. Saucy usually bakes with butter – she’s a butter fan – but for a batch of cupcakes from a mix, margarine will do just fine”.
Melt your butter or margarine in the microwave so that the melted liquid fills your measuring cup to the 1.5 cup line. Dump all the above ingredients, along with your cake mix into your mixer and mix on low for a couple of minutes. Be sure to scrape the entire bowl at least a couple of times to ensure you don’t miss any of the dry batter. I didn’t scrape to the bottom the first time and had to go back and do it again when I discovered dry cake mix lumps . Then turn your mixer on high and let her rip for a good minute or so.
Fill your cupcake liners 3/4 full, and bake according to the directions on the box. Saucy also says to be sure and “cool them on a rack absolutely and completely before you do anything to them”. That’s a must. Unless you like runny icing.
I have a problem waiting to eat anything sweet before its completely ready. Don’t they look yummy? They taste pretty snazzy. I know because I couldn’t resist a spoon full!
